Hummus Burrito (Summer)

Ingredients

  • Flour tortilla
  • Hummus (recipe link below)
  • Jasmine rice
  • Roasted red peppers
  • Lettuce
  • Onions
  • Cilantro
  • Cheese

Instructions

To make roasted red peppers, place red pepper under broiler until it is scorched, turning it every couple minutes then place in a brown paper bag until cool, slip the skins off  and chop.

Spread a flour tortilla with hummus (recipe is here)

Add a layer of jasmine rice, roasted red peppers, lettuce, onions, cilantro and sprinkle with cheese.  Pop it under the broiler until cheese melts, then roll up and enjoy!
