Burrito in a Bowl

Ingredients

  • Jasmine rice(or cauliflower rice)
  • 1 lime, juiced
  • Cilantro, chopped
  • Black beans
  • Cheese
  • Onion, chopped
  • Cucumber, chopped
  • Lettuce, shredded
  • Cilantro
  • Fresh salsa (recipe link below)
  • Avocado, sliced (optional) or guacamole (recipe link below)

Instructions

Mix Jasmine rice with the lime juice and chopped cilantro. You could also use Cauliflower Rice (recipe is here).

In a wide bowl, put jasmine or cauliflower rice in the bottom.  Next, put a layer of black beans and then top with cheese.  Place under a broiler just long enough to melt cheese.

Spring with onion, cucumber, lettuce (whatever veggies you prefer) and a little more cilantro.

Top with the salsa (recipe here) of your choice or use this recipe. Add fresh sliced avocado or guacamole (recipe here).
