Black Bean Hummus

Ingredients

  • 2 cups black beans, soaked and boiled OR 1 can rinsed well
  • 1/4 cup tahini
  • 1-2 cloves garlic
  • 1-2 TBSP extra virgin olive oil
  • 1 TBSP lemon juice
  • 1/2 tsp ground cumin
  • 2 TBSP cilantro or parsley, chopped
  • Salt & black pepper to taste

Instructions

Add the rinsed and drained black beans, tahini, garlic, olive oil, lime juice and cumin to a food processor and blend until completely smooth and creamy.

Season with salt and pepper to taste and stir in the cilantro or parsley. If the mixture is too thick for your liking, add a little more olive oil and lemon juice.

Serve immediately or store in the refrigerator in an airtight glass container.
